Hungarian Goulash - Info and Goulash Recipes

Ah, goulash - Hungarian goulash! Do you remember having stew as a child? I hope you liked it! Think of this goulash as a stew, a stew Hungarian style. That is Hungarian Goulash! It sure seems like I ate lots of delicious stew when I was a youngster growing up in Cleveland in Northeastern, Ohio. And, lots of Hungarian foods like goulash too!

I am eternally grateful to the fond food memories, instilled in me, thanks to my wonderful grandma, Julia Nagy.

Goulash is known as Gulyás in Hungarian. That name originates from the word gulya meaning herd of cattle or cowherd.Where's the beef?

Where is the beef? It is probably in the goulash. Hungarian Goulash and Stuffed Cabbage are two Hungarian foods which are top of my list of favorite comfort foods. The third Hungarian food that is my favorite comfort food would be Hungarian Chicken Paprikas or Veal Paprikas.

I took this picture of Hungarian Goulash during our vacation to Hungary and Romania. It was actually Made in Hungary, shot in Hungary, and finally eaten in Hungary!

In a nutshell, what is Hungarian Goulash?

Think of American Stew! Goulash is similar to American Stew, but I think, much better! It is a hot dish, originally from Hungary, made of beef, onions, red peppers and paprika powder.

In some regions of the United States, the term goulash can be used interchangeably with hot dish and casserole.

It is most often prepared as a stew and served with boiled or mashed potatoes, polenta or dumplings. ~ Goulash Defined - Free information from Wikipedia Encyclopedia.

Grandma's Cooking was the Best!

Hungarian Goulash Recipe

Prep time: 30 min
Cook time: 1 hour 30 min
Ready in: 2 hours
Yields: 6

Ingredients
  • 2 lb. beef chuck
  • 1 tsp. salt
  • 2 onions
  • 2 Tbsp. lard or shortening
  • 2 Tbsp. imported sweet Hungarian paprika
  • 2 bay leaves
  • 1 qt. water
  • 4 peeled and diced potatoes
  • 1/4 tsp. black pepper
Instructions
  1. Cut beef into 1 inch squares, add 1/2 tsp. salt.
  2. Chop onions and brown in shortening, add beef and paprika.
  3. Let beef simmer in its own juice along with salt and paprika for 1 hr. on low heat.
  4. Add water, diced potatoes and remaining salt.
  5. Cover and simmer until potatoes are done and meat is tender.
  6. Prepare egg dumpling batter: 1 egg, 6 Tbsp. flour, 1/8 tsp. salt.
  7. Add flour to unbeaten egg and salt. Mix well.
  8. Let stand for 1/2 hour for flour to mellow.
  9. Drop by teaspoonful into goulash.
  10. Cover and simmer 5 minutes after dumplings rise to surface.
  11. Serve hot with dollops of sour cream.

Get a Cast Iron Pot!

My grandma had an old, reliable, cast iron pot something like this one that she used all the time for her Hungarian recipes.

I first heard "dutch oven" from my grandma Julia Nagy. You will get a lot of use out of the Lodge L8DOL3 Pre-Seasoned Cast-Iron Dutch Oven with Dual Handles, 5-Quart. The size is perfect for making goulash or stew. It measures 10-1/4 inches in width and is also made in the USA!

What is different about Hungarian cooking?

What makes Hungarian Goulash SO good? Hungary is known for its exotic, tasty and spicy food and delicious wine. In general, the preference is for rich and spicy sauces, stews and sweets over rather "drier" dishes. In particular, the liberal use of a few special ingredients which give it its own inimitable and original flavor.

These are first of all red pepper, fresh green peppers and tomatoes, sour cream and lard. The use of lard or goose-fat instead of other forms of fat for cooking is traditional and certainly typical but nowadays more and more Hungarians are worried about the cholesterol content of lard, so often other fats are substituted. ~ Hungarian Cooking - What is different about Hungarian Cooking?

Hungarian Cuisine Ingredients
It's in the Goulash! The most well-known specialities of the Hungarian cuisine such as goulash soup along with the different varieties of stew or paprikash are red with paprika. It should be noted that dishes flavoured with paprika need not be hot. In fact, some of the finest brands of paprika are not strong at all.

Fresh green peppers and tomatoes are also frequently used to flavour these dishes, the essence of which is the same: braise any kind of meat in lard/oil with onions, and season it richly with red pepper.

Sour Cream is an essential ingredient in many Hungarian dishes too. It is a basic ingredient of "paprikash" (any kind of meat or just plain potatoes prepared in paprika sauce, to which sour cream has been added), as well as in many Hungarian vegetable dishes and casserole stews.

Facts about Hungarian Paprika
The Goulash Spice - Also known as the pepper fruit.

Paprika, Capsicum annuum, is a sweet-to-mildly hot cultivar of the chile pepper of the family Solanaceae. It is cultivated for its fruit, which are dried and used as a spice or seasoning. C.annuum is a native of South America; however it is cultivated most extensively in Hungary.

The English word was borrowed directly from Hungarian, which in turn borrowed the term from the adjacent Slavic peoples.

Paprika is noted for its high vitamin C content; vitamin C was first isolated by Hungarian scientist Albert Szent-Gyorgyi from Hungarian paprika. He earned The Nobel Prize in Physiology or Medicine in 1937, for his discoveries in connection with the biological combustion processes, with special reference to vitamin C and the catalysis of fumaric acid.

  • Hungary is famous for this spice.
  • Paprikas produced especially in Kalocsa on the Danube and Szeged on the Tisza are the best in the world.
  • The rose paprika, made from choice dark red pods that have a sweet flavor and aroma, is generally considered the finest variety.
  • A sharper Hungarian variety, Koenigspaprika, or king's paprika, is made from the whole pepper.
  • Hungarian paprika is characterized by a hotter taste, achieved in recent times by adding hot, red capsicum pepper to ground paprika.
  • Its bright color makes it an excellent garnish for nonsweet, light-colored foods.
  • It is especially associated with Hungarian cuisine and is essential for such hot, spicy, Hungarian stew dishes.

Butter Horns - Traditional Hungarian Pastry

Grandma made the best Hungarian butter nut horns! Ah, Hungarian Butter Horns especially butter nut horns and butter apricot horns! Holidays were always the time of year that my grandmother Julia Nagy baked the most of her famous Hungarian Butter Horns. In fact, my grandma was famous locally for her traditional Hungarian pastry butter horns! She could make hundreds of these at a time, with several different fillings -- usually nuts, apricots, and prune.

Grandma's nut horns, apricot horns, and prune horns were all so delicious. I love to reminisce about sitting in my grandmother's kitchen in Cleveland, Ohio and watching her cook and bake her butter horns. Her dough recipe was always so light and flaky. And, she was generous with her fillings.

It's interesting about nostalgic food memories. You can almost smell and taste these butter horns too. And, I actually can visualize grandma rolling out the dough, filling the butter horns and baking them. Ah, memories! Get the best-ever recipe here for this delicious comfort food. Grandma's Cooking the Best!
My grandmother's butter horns were so good that they melted in your mouth. She didn't need icing, but simply sprinkled confectioner's sugar on the horns after they cooled.

Hungarian Butter Horns Best-Ever Recipe
Grandma's recipe always used sour cream and Crisco!

Ingredients and Instructions
Dough: 4 cups flour
1 tsp. salt
1 packet yeast

Mix and add: 1/2 cup butter
1/4 cup lard
1/2 cup Crisco

Add: 3 egg yolks
1 cup sour cream
1 tsp. vanilla

Form into 3 balls and chill 5 hours or overnight. Roll out balls with powdered sugar and cut with pizza cutter. Then spread filling on and shape roll into crescent.

Filling: 3 egg whites
1 cup sugar
1 tsp. vanilla
1 cup chopped nuts

Bake at 375 for 15 to 20 minutes until slightly browned. Sprinkle with confectioner's sugar when done.

Traditional Hungarian Butter Horns Recipe

Ingredients - Dough
4 cups flour
1 tsp. salt
1-1/4 cups butter
1 cake yeast
4 egg yolks
1/2 cup sour cream

Instructions: Cut flour, salt and butter with a pastry blender or fork. Crumble yeast in flour mixture. Beat egg yolks and sour cream. Add to first mixture. Divide into 8 Equal parts. Roll each portion as you would for a pie. Cut into 8 wedges.

Ingredients - Filling
4 egg whites, beaten stiff
1 cup sugar, beaten stiff
1 cup finely ground nuts
1/2 tsp. vanilla

Instructions: Spread filling and roll from wide end. Bake on cookie sheet at 350 degrees for 18 minutes. Makes 64. --cooks.com.

Kifli - Traditional Hungarian Pastry

Kifli is a traditional Hungarian crescent-shaped pastry made by cutting sheets of soft flour dough into triangular wedges, and wrapping those wedges to create a crescent-shaped morsel, which is then baked. I think of them as a variation on the Hungarian Butter Horns.

Hungarian Kifli Recipe

Ingredients
6 cups flour
1 cup sour cream
1/2 cup sugar
3 sticks butter [I prefer Land O'Lakes sweet butter]
2 sticks margarine
5 egg yolks
1 teaspoon vanilla
Egg wash
Confectioners' powdered sugar

Fillings
Apricot butter is my fruit preference.

Nuts: 8 ounce finely ground walnuts are mixed with 2/3 cup sugar and 1/3 cup milk.

Instructions

In a mixing bowl you will add the egg yolks first and then stir in vanilla and add the sour cream. Be sure to mix these ingredients well.

Sift the sugar and the flour. You will then cut in the butter and margarine. Make a well in the flour mixture. In the well, add the egg mixture to form a dough. You will then work with the dough mixture to shape it into a log shape.

Divide dough into 6-8 pieces. Cover the dough pieces with saran wrap and refrigerate for about 4 hours.
Work with the refrigerated dough by rolling out the pieces to about 1/8 inch thick. It is recommended that you use a round cookie cutter about 3 inches in diameter.

Place 1 teaspoon of your fruit or nut filling In the center of each round dough piece. Fold the filled dough in half. Use a butter knife to seal the open end of the filled dough.

Place on a non-stick baking pan. Form a crescent with each piece by twisting each end. Use a pastry brush to brush the egg wash across the crescent tops.

Bake for approximately 10 minutes in a 400 degree preheated oven. We always use confectioners' sugar through a sieve to sprinkle on top of the finished kifli.

Another recipe for Hungarian Kifli
From Dee Coulter, St. Maries, Idaho

Dough
4 cups flour
2 cups butter or margarine
4 egg yolks
3/4 cup powered sugar
1 cup sour cream

Filling
1-1/4 pounds almonds, ground fine
1 cup sugar
1/2 cup milk
1 tablespoon almond extract

Instructions
Make dough, blending with pastry cutter or fork. Mix flour and margarine, then add the egg yolks, mixing well. Add sour cream and powdered sugar; knead dough until smooth, adding more flour if it sticks to surfaces. Refrigerate for 1/2 hour.

Roll out 1/4 of the dough at a time. Keeping the rest of it refrigerated until ready to use. Roll to 16-inches by 12-inches and about 1/8-inch thickness. With pastry wheel, cut in 2-inch squares.

Place a rounded teaspoon of filling in center of each square. Bring opposite corners together to overlap in the center and pinch closed. Brush with beaten egg, after being placed on a cookie sheet.

Bake at 400 degrees for 10 to 12 minutes, until golden brown. Roll in powdered sugar. Let cool and enjoy.

Another recipe for Hungarian Kifli
Ah, Christmas Pastries Hungarian Style

Ingredients:
1 cup butter or margarine, softened
1 cup cream style cottage cheese
2 cups all-purpose flour
2 egg whites
2 cups chopped nuts
1/2 cup water
2 tablespoons ground cinnamon

Instructions:
In large bowl, beat together butter or margarine and cottage cheese til light and fluffy. Add flour until dough forms a ball. Divide dough into 3 equal portions. Wrap in plastic wrap and refrigerate until firm.
Preheat oven to 375 degrees F (190 degrees C) and grease cookie sheets.

To Make Filling: Combine egg whites, nuts, water, and ground cinnamon. Mix well and set aside.
On a floured surface roll 1 portion of dough into a 10 inch circle. Spread circle with 1/3 of the filling to within approximately 1/2 inch of the edge. Cut circle into 24 pie shaped wedges. Beginning at outer edge roll up each wedge tightly. Place point side down on cookie sheet 1-1/2 inches apart.

Bake 13-15 minutes or until golden (be sure to watch carefully as these cookies burn easily). Remove to rack to cool. Repeat process with each remaining portion of dough and filling. --christmas-cookies.com

Kifli Legendary Origin 
Legend has it that kifli is the progenitor of the croissant. "Kifli is a traditional Hungarian yeast bread or pastry rolled into a crescent shape." You know? Just like a croissant!

Langos - Traditional Hungarian Food

I sure do love Hungarian Langos folks! Lately, I've been hearing a lot of buzz about Hungarian Langos which is a traditional Hungarian food that is rather like a fried bread. Thinking about langos makes for a nostalgic moment in taking me back to my grade school experiences staying with my grandmother, Julia Nagy, in Cleveland, Ohio.

That one year alone with grandma helped to put on 15 pounds from all of her fantastic Hungarian and Slovak cooking. Of course Hungarian Langos were a big part of the menu along with stuffed cabbage, hungarian goulash, hungarian spaetzle, nut roll, poppy seed roll, butter horns, kifli, strudel, apple pie, crepes suzette and oh so many other traditional Hungarian goodies!

Thank goodness for our grandmothers for their sharing the family recipes and for creating our love for such comfort foods!

Ingredients
3 c. flour
1 pkg. yeast
1 pinch salt
1 tsp. sugar
1 c. water
1 pat butter

Instructions
Melt butter in saucepan, add water and heat through until warm (105-115 degrees). Pour into large bowl. Add yeast and sugar to bowl and let stand for a few minutes for yeast to soften. Add 2 cups flour to bowl and beat with electric mixer until well blended. Add the rest of flour to bowl.

Knead on a lightly floured surface until dough is smooth and elastic. Place dough in greased bowl, cover with damp paper towel and let rise for 1 hour.

Punch dough down and roll dough on floured surface to 1/8 inch thickness.

Cut as desired pieces and fry in hot oil until slightly brown. Remove from oil and place on several thicknesses of paper towels to cool. Rub with fresh garlic before serving.

Ingredients
2 medium potatoes
1-1/4 to 1-2/3 cups of milk
1 oz yeast
Pinch of sugar
14 oz flour
1/2 tsp salt
1 liter ( 1 quart) of oil

Instructions
Cook the well washed potatoes. In a mug, prepare the leavening agent: crumble the yeast into 1/2 cup lukewarm milk, add the sugar and mix with a little flour.

Sprinkle the top with 1/2 tspn of flour, cover with a cheesecloth and at a warm room temperature let it raise. Peel and mash the potatoes. Sift rest of the flour into a deep bowl, depress in the middle and pour in the leavening agent.

Add the still warm mashed potatoes, 1 tablespoon oil and lukewarm salted milk to make a medium stiff dough, then beat with a wooden spoon or mixer until bubbly.

Sprinkle the top with 1/2 tspn flour cover with a cheesecloth and put in a similary dry warm place for about an hour to raise to twice its size. Tear pieces of the dough and pull them thin, palm size.

Put them in plenty of very hot oil and fry one side under cover, remove the cover and fry the other side until crispy. You can sprinkle with salt or rub with garlic.

Ingredients
1 lb. flour
3/4 lb. mashed potatoes
1 tsp. sugar
1 pkg. dry yeast
1/2 tsp. salt
1 c. milk
Oil to deep fry

Instructions
Put yeast in lukewarm milk with sugar and let rest 15 minutes.

In another bowl mix the flour and mashed potatoes and make a well and add the yeast mixture and begin to blend. When well mixed immediately knead until smooth and satiny.

Let rise in warm place covered with a clean cloth until dough has doubled its size. Punch down then take a piece about the size of a large hand and pat until it is about 2 inches thick. Then drop into the hot oil and cook on both sides until golden brown.

NOTE: May be eaten with garlic butter or sprinkled with cinnamon and sugar on just plain sugar. --www.cooks.com.

Grandma made the most nutty pastry rolls! The Nut Roll is a traditional Hungarian pastry that is a sweet bread known as Beigli. Grandma Julia Nagy made her Beigli or Hungarian Nut Roll usually during the holidays of Christmas and Thanksgiving. Beigli [pronounced BAY-glee] is really a Hungarian sweet bread with special fillings. It is the filling that makes this nut roll pastry so tasty and nutty! My favorite nut roll fillings include chopped walnuts or chopped pecans.

Growing up in Northeastern Ohio, we ate a lot of European recipes thanks to my grandmother who if she were alive today would surely be FAMOUS for her RECIPES! You know those traditional Hungarian recipes for these comfort foods: stuffed cabbage, hungarian goulash, hungarian spaetzle, langos, nut roll, poppy seed roll, butter horns, kifli, strudel, apple pie, crepes suzette and oh so many other traditional Hungarian goodies!

At the top of my traditional Hungarian pastries "favorites" list was grandma's recipes for Hungarian nut rolls along with Hungarian poppy seed rolls! I am so grateful, and proud, to have grown up in the Cleveland, Ohio area. I am so thankful for having a grandma who instilled, in me, a love and passion for Eastern European foods and culture.

My grandmother was an amazing cook who prepared dishes and desserts that I will always treasure. Another one of grandma's favorites to prepare is the Hungarian Nut Roll. I can honestly say that I miss her as I'm sitting here writing this lens to commemorate another of her favorite recipes. I love nut rolls! The most Traditional and Authentic Hungarian Nut Roll Recipes!

The very first time that we ordered a nut roll from Bubba's HomeBaked, we got one of each and it didn't last long. Here is a picture of the actual nut roll AND poppy seed roll that we had. After sampling these rolls a number of times, we came up with our favorite manner of preparation. We cut almost a one inch slice of the nut roll and placed it in a small corning ware dish. On top, we spread a bit of butter, covered, and then microwaved until the butter melted and the nut roll was warm. This was incredibly delicious to eat the roll with the warm walnut filling!

#1 Hungarian Nut Roll Recipe
For nut rolls, butter and sweet cream are important elements!

Ingredients
1 square of yeast or 1 envelope
1/4 cup warm milk
1/2 pound butter
4 egg yolks
1/2 pint sweet cream (half and half)
4 cups flour
1 teaspoon sugar
3/4 teaspoon salt

Instructions
Let yeast dissolve in milk for a few minutes. Melt butter. Mix butter with beaten yolks in big bowl. In a separate bowl, sift flour, sugar and salt together. Mix yeast mixture with butter and egg yolks, sweet cream, and then flour mixture. Beat with wooden spoon or spatula until smooth or use hands to mix. The mixture will absorb the flour, cleaning the sides of the bowl. Shape into 3 balls and refrigerate overnight.

Roll out each ball into rectangle 1/8 to 1/4 inch thick. Sides will be about 12 by 16 inches. With paring knife, even off sides slightly. Spread with nut filling to within 1/2 inch of sides. Roll from short side up long side. Place the three rolls side-by-side on a 10 by 14 inch baking pan or cookie sheet and let rise in a warm area for 3 hours. Brush top with beaten egg. Bake at 325 degrees for 1 hour.

Nut Filling
1 pound nut meats, finely chopped
1-1/2 cups sugar
1 teaspoon vanilla
4 egg whites beaten to stiff stage

Instructions
Mix together nuts and sugar and then add vanilla. Fold in beaten egg whites. Use 1 to 1-1/4 cups filling per roll. Yields 3 rolls. --www.johnekolbasz.com.

#2 Hungarian Nut Roll Recipe - Like Grandma's!
My grandmother gravitated to sour cream in her recipe!

Ingredients
6 to 6-1/2 cups sifted flour
3/4 teaspoon salt
6 tablespoon sugar
2 yeast cakes or 2 packages dry yeast
1/2 cup warm milk
1 cup sour cream
2 sticks butter or margarine, melted or very soft
3 eggs, beaten

Instructions
Dissolve yeast in milk. Combine the rest of the ingredients; add yeast and milk mixture, blending very well. Divide dough into four or six parts depending on length of nut roll wanted. Roll about 1/4 inch thick, spread with nut filling and roll up jelly roll fashion. Let rise for 1 hour or until doubled in size. Bake in 350 degree oven for 30 to 40 minutes.

Nut Filling
1 to 2 pounds ground walnuts
2-1/2 cups sugar
2 sticks butter or margarine melted
2 eggs
1 large apple grated
1/2 teaspoon cinnamon

Instructions
Combine all ingredients except the butter. Add the melted butter and mix well. Heat in large saucepan until the ingredients blend well and thicken slightly. Spread on rolled dough after the mixture has cooled. You can freeze any extra and use as a topping for an apple pie or top baked sweet potatoes or use in a coffee cake recipe. --www.johnekolbasz.com.

Make Your Own Pastry Rolls!

Start With Poppy Seed Filling! - Grandma Julia Nagy always started with poppy seeds from the West Side Market in Cleveland, Ohio.

May I recommend a handy can of Solo Cake & Pastry Filling Poppy Seed 12.5 oz. Once you become an expert chef, you can prepare your own poppy seed filling from scratch!

Beigli Hungarian Sweet Bread Pastry Roll gray box

Hungarian Poppy Seed Roll Recipe

Beigli Hungarian poppy seed rolls on a pretty plate
Ingredients
2-1/4 tsp of traditional active dry yeast
1/4-1/2 cup milk
1 tsp granulated sugar
1/4 cup lukewarm milk
4 cups all purpose flour
1/3 cup + 1 tbsp icing sugar
1/4 tsp salt
1-1/2 sticks of unsalted butter
3 egg yolks
 
Poppy Seeds filling: 1-1/3 cups poppy seeds, grind well; 5 tbsp sugar; 1 tbsp honey; 1 tsp grated lemon rind; 1 tbsp apricot jam

Instructions
Dissolve the yeast and granulated sugar in 1/4 cup of lukewarm milk. Set aside for 10 minutes until the liquid forms a foamy mixture.

Combine the flour, icing sugar, and salt in a large bowl. Cut in the butter. Mix well. Make a well in the center and add the yeast mixture and egg yolks. Mix gently, gradually adding 1/4 to 1/2 cup milk until the dough can be formed into a ball. Cover with a cloth and let rise until doubled in size (2 hours).

Mix the ingredients for the poppy seed filling in a medium saucepan and simmer over a low heat for 15 minutes, stirring frequently. Remove from the stove and allow to cool.

Divide the dough into two halves and roll each half on a floured surface into 12 x 18 inch rectangles. Spread the poppy seed filling on the dough, leaving a margin of at least an inch on all edges.

Turn up the sides to prevent leaking and roll the beigli lengthwise to form a 12-inch roll. Brush the tops of the rolls with egg whites, poke a few holes in them with a fork. Bake at 350 deg. F for 40-45 minutes or until golden brown.

Hungarian Poppy Seed Roll Recipe

Ingredients
5 or 6 cups flour
1 lg. fresh yeast or 3 dry yeast
1 can milk
6 egg yolks
1 tsp. vanilla
3 tsp. sugar
1 lb. butter
1/2 tsp. salt
1 or 2 cans poppy seed filling

Instructions
Scald milk; add butter, sugar, salt, and dissolve. Let cool. Mix yeast in 1/4 cup warm water. Let rise or soften.

Beat eggs until light. Mix yeast mixture, milk, and eggs together. Put flour in large mixing bowl. Mix flour and mixture together and knead as for bread until satiny.

Place dough in a greased bowl and cover. It can be refrigerated for up to 24 hours. Divide the dough into 4 balls of dough. Roll out on sugar instead of flour, using one ball at a time.

Spread poppy filling onto the dough. Cut the dough as for pie wedges. Roll up and shape into crescents. Place on greased cookie sheet and let rise 15 minutes. Bake at 350 degrees for 25 minutes. --www.cooks.com.
