Cheesy Scrambled Eggs with Mushrooms and Onions

Make it a hearty meal with Cheesy Scrambled Eggs with Mushrooms and Onions. Add a little cayenne pepper and make it spicy! I like my scrambled eggs with the extras like cheese, mushrooms and onions.

Today I am sharing a easy to make, delicious recipe that you can customize to feature your favorite cheeses. One option is to add a slice of three of your favorite cheeses. Or, you can opt to just add the one; you decide! I also like a lot of onions and mushrooms.

You will find that this is a tasty dish not only for breakfast, but for lunch or dinner. Who says scrambled eggs are only for breakfast? Oh, and if you like it spicy, like me, you'll appreciate adding a little more of the cayenne pepper! They'll be asking, "What's that I taste? It has a little kick to it!"

Just Say Cheese!
I like a little cheese in mine; how about you? Oh gosh, I seriously had a flashback to many years ago in Atlanta, Georgia. It was the weekend and I was over my friend Beverly's house. She loved making scrambled eggs with cheese. I do think Beverly inspired me to expand my horizons and consider blending different kinds of cheeses in my cooking.

When I scramble my eggs, they usually have something extra in them. Today, I am sharing my favorite way of preparing them.

Oh, and I like it spicy too. I am always adding a dash or two of cayenne pepper to the recipe. It's good for you and it does give the taste a spicy heat that is quite pleasant.

I had another friend from FujiFilm, Mike, who used to travel with a bottle of Tabasco Sauce in his briefcase. He was always sprinkling it on his scrambled eggs. I've tried that and it is a good additive along with spicy salsa.

And, who says you have to only prepare this for breakfast? I've also had it for lunch and even for dinner! You getting hungry?

Cheesy Scrambled Eggs with Mushrooms and Onions Recipe

Who doesn't love scrambled eggs? I remember many years ago learning how to make scrambled eggs in my Home Economics class at Roehm Jr. High School in Berea, Ohio. I honestly can't think that any of my fellow students didn't ace this class! Back then, the recipes were very simple!

Personally, I like to add stuff to mine! I like to change up the cheeses -- sometimes I will use all Colby Jack or Muenster or Sharp Cheddar. Other times I will use a slice of each! And maybe I will add a bit more onions and mushrooms.

Also, the amount of cayenne pepper can make this dish very spicy! You choose how much.

Ingredients
  • 3 Large Eggs
  • 3 Tablespoons Milk or Water
  • 1/2 Cup Diced Onions
  • 2/3 Cup Sliced Mushrooms
  • 3 slices of Cheese - Colby Jack, Muenster, Cheddar
  • Dash of Cayenne Pepper<
  • Dash of Salt and Pepper
  • 3 Tablespoons Butter

Instructions
  1. Crack your large eggs into mixing bowl and beat until blended.
  2. Add your milk or water and blend; set aside.
  3. Melt butter in frying pan on medium heat.
  4. Add onions and fry until softened and lightly golden.
  5. Pour in egg mixture.
  6. Add in mushrooms.
  7. Place slices of cheese on top.
  8. Season with cayenne pepper, salt and pepper.

You'll Need a Teflon-Coated Frying Pan!

For this recipe, I couldn't have done it without my frying pan!

I've actually had my eye on a little jazzier edition of pan ... like this one. It's the TeChef - Art Pan 11" Frying Pan, Coated 5 times with Teflon Select Non-Stick Coating (PFOA Free) / Induction Ready. I like everything about this item! The color, the style, the features.

When I was growing up ... in the 1950s ... we didn't have teflon-coated frying pans! I remember that brillo pad that I had to use to scrape the stuck on foods like eggs and cheese. Today, we are fortunate to have non-stick!

This is an incredibly stylish pan. Did you notice it is purple? I love that color and never thought I'd see it in a frying pan. This pan has 5 coats of teflon ... I can't imagine any of your breakfast foods sticking to this pan ... they will all come out on your dish.

How To Make This Recipe!

I know it's easy, but I wanted to share my tasty photos!

The onions have been fried until golden and the egg mixture along with mushrooms have been added.

Now for the addition of the "kick" -- cayenne pepper has been added to spice it up.

Half each of the three slices of cheese and add it on top of the mixture.

Fold in all the ingredients in the frying pan until cooked thoroughly.

Not just for breakfast any more! It's Easy Cheesy Omelet with Mushrooms and Onions, a hearty egg meal. I love omelets especially with cheese. Here is my recipe for an easy cheesy omelet with mushrooms and onions that is great for breakfast, lunch or dinner.

In fact, for me, it was my dinner last night! I had been busy all day with such a variety of chores and appointments, that I was worn out at the end of my work day. Nothing was thawed and what to have for dinner was a dilemma.

Why not eggs? I thought, I could make my Cheesy Scrambled Eggs with Mushrooms and Onions recipe. But, I didn't want scrambled eggs.

Hey, I know ... let's not scramble it, but make an easy omelet instead. And, let's have it with a fresh brewed cup of Costa Rica Tarrazu Whole Bean Coffee! So, here it is! With a dash of cayenne pepper to make it spicy ... just like ME! Oh, and toasted jalapeno cheddar bread on the side. Enjoy.

I love CHEESE and Cayenne Pepper!
You might have already known that. Yes, I grew up loving cheese although today I surely eat more of it. I always say that is how I get my calcium since I never liked milk. I've always felt I was lactose-intolerant.

There are so many excellent cheeses on the market. I think the only thing that holds me back, personally, from using some of them in my recipes is the cost!

Have you seen the prices on some of the cheeses? Holy smokes ... a lot more than a gallon of gasoline or a pound of meat.

So, for us budget conscious shoppers and chefs, we have to find those cheeses that work in price and taste.
I've found that the Publix brand is pretty tasty ... especially for my scrambled eggs and omelets. In today's recipe I used Publix cheese!

P.S. Cheese is a major comfort food for me along with cayenne pepper!

And, how appropriate to think about the incredibly edible egg ... it is a humble food; one of my favorite comfort foods that can transition to being a comfort food any time of day! Don't you just love how easy this comfort food recipe is to make?

I mean, I think everybody can do it. It's not that tough to break a few eggs. This is your time to get creative ... pick the cheese that you love. Use all of one kind, or try different ones mixed together.

You can be pleasantly surprised at the delicious taste. In this serving, I opted to add two slices of jalapeno cheddar demi loaf toasted as my side.

My Easy Cheesy Omelet with Mushrooms and Onions Recipe

Ingredients
  • 3 Large Eggs
  • 3 Tablespoons Milk or Water
  • 1/2 Cup Diced Onions
  • 2/3 Cup Sliced Mushrooms
  • 3 Slices of Cheese - Colby Jack [optional: Muenster, Cheddar]
  • Dash of Cayenne Pepper
  • Dash of Salt and Pepper
  • 3 Tablespoons Butter
  • Optional: 2 Slices of Toast - Jalapeno Cheddar Demi Loaf
Instructions
  1. Crack your large eggs into mixing bowl and beat until blended.
  2. Add your milk or water and blend; set aside.
  3. Melt butter in frying pan on medium heat.
  4. Add onions and fry until softened and lightly golden.
  5. Add in mushrooms and fry lightly, stirring mixture.
  6. Pour in egg mixture and allow to firm up.
  7. Place slices of cheese on top.
  8. Season with cayenne pepper, salt and pepper.

How To Make This Recipe!
It is easy and it is definitely cheesy!

We've jumped to this step because it is an easy recipe! Notice how it is all one cheese : Colby Jack and that the slices are whole.

Once the omelet has cooked and the eggs are set, you fold it over in the frying pan. You can almost taste, if not smell it!

Add some toast on the side. I made it spicy with Jalapeno Cheddar Demi Loaf from Publix. It has the texture of rye bread which I like.

PST Pickles Swiss and Turkey on Jalapeno Cheese Bread

Ever heard of PST on Jalapeno Cheese Bread? That's actually Pickles Swiss and Turkey on Jalapeno Cheese Bread. I have always loved the taste of swiss cheese with oven-roasted turkey. Lately, I've been trying various kinds of Boar's Head swiss and turkey. So delicious and an important part to making this PST as tasty as possible.

This is my second original lunch recipe for making a delicious sandwich of pickles, swiss and turkey using a different kind of bread!

Another Original Recipe!

"Necessity is the mother of invention," they say! So! Perhaps you have already seen my tasty creation(s) on this kind of bread?
For my lunch recipe today, I was asking myself, "what will I prepare today?"

Yesterday I had the original PST on Onion Schnecken Roll ... how about I make another PST but on the last of this spicy loaf? Yeah!

When I prepare a healthy sandwich recipe, I usually prefer a thinner slice of bread. Have you ever checked the calories in each slice? Heck, that can be 120-180 calories a piece! If you are going to consume that many calories, might as well make it a loaf with a lot of personality, nutrition and pizazz.

Making today's offering I ended up with a thicker slice to pair with the heel of the loaf.

PST on Jalapeno Cheese Bread Recipe

PST Pickles Swiss and Turkey on Jalapeno Cheese Bread
This recipe sort of came to me when I looked into my refrigerator and saw the "leftover" jalapeno cheese bread!

I knew I didn't want to have what I had yesterday, PST on a Onion Schnecken Roll, so I changed the bread and made something entirely new and original!
Another pickles + swiss + turkey creation i.e. P-S-T.

The next time I make this, I am hoping it is with a homemade loaf that I made in my own bread maker!

Ingredients
  • 2 slices of Jalapeno Cheese Bread ~ Publix
  • 2 slices of Natural Swiss Cheese ~ Sargento
  • 3 slices of Oven-Roasted Turkey ~ Butterball
  • 8 Kosher Dill Pickle Slices ~ Publix
  • 1 Tablespoon of Kraft Miracle Whip Dressing
Instructions
  1. Toast two slices of bread.
  2. Spread the dressing on the toasted bread.
  3. Add a slice of cheese to each piece.
  4. Add the turkey.
  5. Stack on the dill pickles.
  6. Fold over your sandwich.
  7. Cut it in half ~ I prefer a diagonal cut!
  8. Serve.

I have come to realize that making your own bread is a necessity! If you love to experiment with special ingredients like I do, you could make something out of this world! But, first ... start with one of these!

Publix Bakery Special Order

Here is my pink slip! Would you believe? It was on my bucket list to one day put in a special order to my local Publix grocery store.

I stopped by the bakery to look for another loaf of Jalapeno Cheese Bread. When I didn't see it, I stopped to ask someone working in the bakery department.

The gal told me that yes they had an extra loaf the previous week as it was part of a special order that they had. "Really?" I said. "You mean somebody else had you make this?" "Yes," the gal said, "it is a girl that works in our grocery department - Dimple."

"Can I get a special order of that bread? Will it cost extra?" I was excited to be placing my very first order!

So, I expect to pay $3.59 for a 16 ounce, one pound loaf. I am on the schedule to have it made and available for pickup at Noon on Thursday, April 24th, May 8th and May 22nd.

The girl and I were laughing when we put that schedule together ... I thought weekly would be a bit much. She said, alternating weeks would be the ticket and that I'd probably be sick of it by the third week. We'll see.

Lately, I like my food spicy. So, I've changed up my bread to a Jalapeno Cheese bread that I found in my local Publix bakery. For years, I made the traditional sandwich with tomato soup. But, why not kick it up a notch?

TRY SPICY BREAD
I have been experimenting for years with different types of cheeses, breads and optional ingredients to make a tastier sandwich. As luck would have it, I saw that loaf of Jalapeno Cheese bread and thought it would be a tasty alternative for "normal" bread.

TRY DIFFERENT CHEESES
For this particular sandwich, I used two slices of Colby Jack and one slice of Muenster. Both were from my Publix deli. Once in a while, I will use a third cheese like Sharp Cheddar for one slice each of three different cheeses.

TRY OPTIONAL INGREDIENTS
The tablespoon of Kraft Miracle Whip inside the sandwich, really puts the taste over the top. I was missing the extra ingredient which I normally put inside -- kosher dill pickle slices! You might also try sliced jalapeno peppers or even chopped onions!

HOW TO MAKE IT

The Recipe for the best Grilled Cheese!

Ingredients
  • 2 slices Jalapeno Cheese Bread
  • 2 slices Colby Jack Cheese
  • 1 slice Muenster Cheese
  • 1-1/2 tablespoon I can't Believe It's Not Butter
  • 1 tablespoon Kraft Miracle Whip

Instructions
  1. Slice your Jalapeno Bread into two 1/2 inch slices.
  2. Butter both sides of your sliced bread with I Can't Believe It's Not Butter.
  3. Put buttered slices into frying pan on medium heat.
  4. Flip the slices when the butter has melted.
  5. Add a slice of Colby Jack to each slice.
  6. Add one slice of Muenster to one slice.
  7. When cheese is melted, add Kraft Miracle Whip to one slice.
  8. Fold over the two slices, making grilled cheese sandwich in pan.
  9. Place your sandwich on a plate and allow to cool slightly.
  10. Slice your sandwich and serve.

My Personal Taste

Sharing my photos and my recipe for something a little spicy! After many years of preparing my favorite foods, I've found that I love to experiment. Sure, I will refer back to my recipes, but I will often vary the ingredients to suit my taste.

That's how I happened upon making this spicy sandwich recipe. You see, normally chefs will use American cheese to make their grilled cheese sandwiches. However, I don't usually buy that product ... in fact, I can't tell you the last time I did buy it. I don't like that kind of processed food.

So, on my recent trip to my local Publix grocery, I found a most unusual looking loaf of bread. Even the cashier had to remark about its appearance -- it was not your typical loaf. I've never seen Jalapeno Cheese Bread in the bakery previously. I like to try new things, so I decided to try it.

Continuing to do my grocery shopping, I came to the deli department and picked up one package each of the Publix brand cheese -- Colby Jack and Muenster.

I already had Kraft Miracle Whip dressing and I Can't Believe It's Not Butter in my refrigerator. Now, to find the perfect day to make this delicious comfort food for lunch!

The Frying Pan!

Personally, I prefer teflon coated. For years, I have used various types of frying pans. For this type of sandwich, I definitely would recommend teflon coated!

The most important part! If you are doing it like I do it, you will need these:

Jalapeno Cheese Bread
Colby Jack Cheese
Muenster Cheese
Kraft Miracle Whip Dressing
I Can't Believe It's Not Butter

I am hoping to actually try making this bread. This was the first time that I actually tried it; I can say that I am hooked on the delicious taste. It also has a special aroma when you are frying it.

#2 - Slice your bread
How thick do you like it? The first slice that I made was way too thick for a two slice sandwich. So, I went with my second and third slice which measured between 1/4 and 1/2 inch.

Take a closer look ... can you see the bits of jalapeno peppers and cheese in those slices? That's the spicy part for this lunch recipe! The bread also has a good texture to hold up to grilling.

I do both sides - how about you? In the past, I used to actually but my butter in the frying pan. And, once in a while, I would add a little extra virgin olive oil to the pan.

For today's version, I opted to butter both sides of my jalapeno cheese bread slices with my favorite "butter." It's I Can't Believe It's Not Butter!

Do you use it too? I probably used a little more than a tablespoon and a half.

Start your pan on a medium heat On my electric stovetop, I have a Hi setting of 4 which seems to work pretty well for a good medium heat.

Occasionally, I will need to dial it down to about a 3 or 3.5.

Just say C-H-E-E-S-E if you please! This is another important ingredient since, HEY! the recipe name includes this, RIGHT?

How many of you have always used American? That's OK ... but maybe it's time to experiment. In today's example, I am using two slices of Colby Jack and one slice of Muenster.

I would have used one each of those and then added a third slice of Sharp Cheddar. Another suggestion is to make it a variety with jalapeno peppers like Monterey Jack.

Don't burn it! It should be a few minutes in the frying pan as you wait for your butter to melt on top of the slice. The underside should be getting a light golden brown.

You will flip your slices to get the other side to a crispy golden brown color.

Be careful not to over grill that bread!

This is one of my favorite cheeses that I can eat right out of the package.

So, the colby jack cheese really adds a lot of taste to this lunch recipe.

It also happens to be a great size for the slice of bread.

#8 - Add third slice of Muenster cheese
It makes a difference! You know, it is great to have another tasty bite for this sandwich. I often pair this type of cheese with the Colby Jack in other recipes -- it works well here too!

Ideally, you get a good taste with two types of cheese and by adding a third, it puts it a little over the top. Experiment and see how you like it.

#9 - Add Kraft Miracle Whip dressing to slice
No mayonaisse for me! Throughout the years, I have had a preference for Kraft Miracle Whip dressing. I don't know what it is, but I really do not prefer mayonnaise. I think mayo has a stronger taste.

When your cheese begins to bubble, and the other side of the bread is crispy and golden brown, add your dressing to one slice.

I definitely used a good tablespoon -- adjust it to your taste.

It's almost SOUP! You can almost taste it, I know!

Carefully fold your two slices of bread to make a sandwich in the frying pan. Don't worry if the cheese seems to melt out of the sandwich.

Sometimes I will flip it to make sure that both sides are crisp enough for my tastes. This looks perfect!
