Breaded Baked Boneless Skinless Chicken Thighs Recipe

I love Breaded Baked Boneless Skinless Chicken Thighs! Who doesn't love chicken thighs? This is a very easy to prepare and very tasty recipe for Breaded Baked Boneless Skinless Chicken Thighs.

I've always loved the smell of chicken baking in the oven! And, I especially love it when I am using the boneless skinless chicken thighs because there are obviously no bones!

You will find that my recipe is a sort of mock-breaded in that I love using Italian Style bread crumbs.

No bones about it, you know? Perhaps you will like it too?

You know, chicken is one of my favorite comfort foods that is so easy to prepare? If I was a vegetarian, I would seriously miss my baked chicken!

When I was married, we had chicken thighs a couple of times during the week. However, they were usually prepared on the outside gas grill or inside on our finished patio on the fancy Jenn-Air Barbecue Grill.

Chicken thighs are so versatile to prepare. I love their perfect little size that you can use a knife or eat them with your fingers.

I personally like to use Vigo Italian Style Bread Crumbs for my breading. You'll find a lot of prepared breading mixes at your grocers, but this is the one I use! Along with the same brand of olive oil.

Plus, my main side dish has long been one of the Uncle Ben's packets of rice. They only take 90 seconds in the microwave and really are quite good. Lately, I've been enjoying the Quinoa and Brown Rice with Garlic. It has quite the interesting texture! ~ The Comfort Foods Ambassador, Jaguar Julie!

You know, I've been using the Vigo brand of products for years. It seems to make sense to use those bread crumbs with their olive oil. Rather a synergistic effect on taste; Italian Style!

My recipe is actually like a mock breaded option.

I don't dip my chicken thighs in egg wash ... you don't really need it.

I like this recipe because it can feed one person three times, two people twice, or three people once. Get it? What's great is that you can also use the baked chicken the next day to make some tasty sandwiches!

Serving Size: 2 chicken thighs with a side of rice and perhaps a salad?

Ingredients
6 Boneless Skinless Chicken Thighs
1/2 cup Vigo Italian Style Bread Crumbs with Imported Romano Cheese
4 Tablespoons Vigo Extra Virgin Olive Oil
Dash Garlic Salt
Dash Cayenne Pepper
Dash Salt and Pepper
Side Dish: Uncle Ben's Quinoa and Brown Rice with Garlic

Instructions
  1. Preheat oven to 350 degrees.
  2. Thoroughly wash your chicken thighs.
  3. Add olive oil and seasonings to bottom of casserole dish.
  4. Place chicken thighs in casserole dish - preferably Corningware Blue Cornflower.
  5. Add olive oil and season with garlic salt, dash of salt and pepper, and cayenne pepper.
  6. Sprinkle your bread crumbs generously to coat the chicken thighs.
  7. Cover and put in oven to bake for one hour.
  8. Uncover at one hour and allow to brown up for 15-20 minutes.
  9. When ready to serve, microwave your packet of rice for 90 seconds.
  10. Serve with suggested serving size of two and a side of rice.
Prep time: 10 min; Cook time: 1 hour 20 min; Ready in: 1 hour 30 min; Yields: 2-3. 

Step-by-Step Instructions and Photos to Guide You!
It's an easy recipe, but I love to get your taste buds drooling.

#1 - These 6 boneless skinless chicken thighs have been thoroughly washed. Net wt. 1.69 lbs., $3.89/lb., total price $6.57.

#2 - In the bottom of your corningware casserole dish, add olive oil along with all your seasonings and spice and breadcrumbs. Then, place chicken thighs on top of that layer. Add your olive oil and all of your seasonings and spices. As much as you like! Easy on the salt.

#3 - Sprinkle your bread crumbs to generously coat the chicken thighs.

#4 - Cover your dish - getting ready to put in a preheated oven.

#5 - Put in a preheated oven at 350 degrees Fahrenheit.

#6 - Bake your dish for one hour covered. You will see it take on a golden glow; plus you will smell the amazing aroma!

#7 - Uncover and leave in the oven for 15-20 minutes to golden up and crisp the tops.

#8 - Your chicken thighs are done! Remove from oven and cover until ready to serve.

#9 - This is the side dish I like best! Don't forget to tear the two top edges before microwaving for 90 seconds.

#10 - Serve two breaded baked boneless skinless chicken thighs with a side of rice - here it is on my Corelle Bamboo Leaf Square Dinnerware!

Breaded Baked Boneless Skinless Chicken Thigh Salad

Dinner one day; salad the next! Baked chicken on a salad is so tasty! On the first night, I had Breaded Baked Boneless Skinless Chicken Thighs as my dinner. Two days later, I sliced up one of those baked chicken thighs and made a creative salad recipe for my lunch! Breaded Baked Boneless Skinless Chicken Thigh Salad to be precise!

First, I start with the green stuff as a base and then figure out my main component.

Next, it's the additives or extra complementary ingredients.

Last, but surely not the least, it is the actual salad dressing.

I Love Chicken!
I will have it at lunch and at dinner too! Chicken is such a versatile protein that can be prepared a number of healthful ways. It's a great meat that tastes even better the next day!

One rather warm day in Jacksonville Florida, I prepared Breaded Baked Boneless Skinless Chicken Thighs in my oven. It was one of those kind of days that I got all wrapped up online and didn't notice it was dinner time and I hadn't put the chicken in the oven yet!

Well, not to worry ... chicken cooks pretty fast. Since it was already defrosted, I knew I would bake it that night and have it the next night for dinner. However! I didn't realize that I would be having one of those 6 baked thighs for my lunch on Friday!

For the longest time, I was buying that package of Publix Romaine. Then, I switched to the variety of packaged salad greens. Generally, I will look for the brand that is on sale when I shop at Publix. Today, it was Fresh Express where you bought one package for $3.99 and then the second was free. You know, BOGO? Buy one, get one!

I love the European Blend too. Sometimes, it's baby spinach leaves. This is the one variable that can change up to customize your particular favorite green stuff!

P.S. Take a look at how much sliced chicken you get from that one thigh! Pretty amazing that you don't realize how big a portion it really is. You also get an idea of how I like to cut it.

Drumroll : The Recipe!

Here it is. By the way, in the end, I opted to switch my salad dressing to something spicy: Chipotle Ranch. After all the photography, I needed something that would kick me in the pants. This easy to prepare and delicious salad takes perhaps ten minutes to put together!

Ingredients
  • Breaded baked boneless skinless chicken thigh, sliced
  • Lettuce greens to fill your plate, your choice
  • 1/4 cup chick peas or garbanzo beans
  • 1/4 cup white mushrooms, sliced
  • One cucumber pickle, sliced
  • Salad dressing, your choice

Instructions
  1. Thinly slice one breaded baked boneless skinless chicken thigh; add to luncheon plate.
  2. Fill your plate with your choice of lettuce salad greens.
  3. Add chick peas.
  4. Add sliced mushrooms.
  5. Add sliced cucumber pickle.
  6. Add your salad dressing!

You must know that I love the luncheon plate that you find in this set. The other night I pulled out the dinner plate and almost had a heart attack!

Good grief, that is the biggest plate ... I would think I'm feeding Hulk Hogan or something. But, each to his own ... I would use the dinner plate as a serving plate!

I love grilled chicken breasts too and the next day, delicious on a salad or chopped up in chicken salad. So, did you enjoy my recipe? I know! I left out the tomato. Lately, I've been eating Tasti-Lee's but there were too big for this salad ... so I saved them for another day.

It got me thinking about the book and movie, Julie and Julia. Did you see that? I was wondering, could you use this book to do something similar, but with chicken? It is my best chicken red curry recipe as it tastes just like the curry we get in our Thai restaurant, if not better!

Today, I am sharing the Spice Meter ... in which readers get to tell us how hot they like it!

How hot do you like your curry? Why not take a moment to drop by and sample some. It's interesting that I was not a spring chicken when I tasted this dish for the first time. Living in Atlanta, a lot of years ago, our office staff went to a local Thai restaurant for lunch. That was my first taste of Thai food. I picked something that was a little too hot.

Then, fast forward to living in Jacksonville, Florida. I was actually in my 50s when I started to crave a taste of Thai food. At first, I gravitated to the green curries. My now ex hubby was always trying the red. One day, I got creative and tried what he was having. Folks! That was the start of a love affair with this dish. Too bad the love affair with the hubby had to end.
